Originally a sculptor, Jaillot only became interested in cartography after his marriage to the daughter of prominent map colourist Nicolas Berey. Around 1669 he went into partnership with Nicolas Sanson's sons, Guillaume and Adrien, and undertook the job of re-engraving, enlarging and re-publishing Sanson's maps. There was a large gap left in the market after the Blaeus' printing house in Amsterdam was destroyed by fire in 1672, and no effort was spared in capitalising on the opportunities which their Dutch rivals' misfortunes offered.

Jaillot's most important work was, 'Le Neptune Francois', a wonderful sea-atlas produced in 1693, in co-operation with Cassini. Although Pierre Mortier re-published the atlas shortly afterwards, it was revised in 1753 by Jacques Nicolas Bellin to great acclaim. (Please see cross references to Sanson and Bellin)

Jaillot produced only one map of Ireland. His large 2 sheet Ireland map, 'Le Royaume D'Irlande', first issued in 1693, is by any standard an impressive and highly desirable map, measuring as it does some 617mm x 885mm, complete with Jaillot's peculiar trademark text on the outside border of the top of the map and his striking and elaborate cartouche. Bonar-Law quotes 4 states of this map, including the 1693 impression, he also quotes the years 1696, 1700 and 1720.
